From a plot of the Domaine's orchards located at Hiautre, in Gonneville sur Honfleur, La Blanche Bio 46% has been produced from more than 20 historical varieties of cider apples.
This high-stem orchard, which has been managed organically since 2013, is a classic example of an orchard where cows and apple trees cohabit. Picked from the ground over a period of more than two months, the washed, sorted and grated apples were pressed in a moderate manner so as not to extract more than 650 litres of juice per tonne of apple.
The apple must was then fermented for a period of 4 months before being distilled twice in an iron still. Placed in stainless steel tanks at the end of the still, the eau de vie was gradually reduced to 46%. vol , to reach its equilibrium degree.
