La Blanche Bio Amphora 60% - Cider Eau-de-vie

Sourced from a specific plot in the Domaine's orchards located in Le Hiautre, in Gonneville-sur-Honfleur, La Blanche Bio 60% AMPHORA was produced using over 20 historic cider apple varieties.

This high-stem orchard, organically farmed since 2013, is a classic example of traditional agroforestry where cows and apple trees coexist in harmony. The apples, hand-picked from the ground over a period of more than two months, were washed, sorted, and grated, then gently pressed to extract no more than 650 liters of juice per tonne of fruit.

The apple must fermented for four months before being double-distilled in a traditional pot still. After distillation, the spirit was reduced to 60% ABV and aged for six months in amphora. The use of amphora softens the eau-de-vie while preserving its full aromatic intensity.
